Biola Athletes

This shoot I did represented those amazing athletes that can do it all. The following athletes are All-American Athletes as well as Scholars. Not only do they compete in Track and Field, they also keep those grades up. To have both of these honors awarded to you at Biola University, you must be a junior or senior. They are such an inspiration for any young athlete. Last year when I ran track, it was so encouraging to see such wonderful upperclassmen with such motivation and talent. I wanted to document their successes :)

College: Round 2

Sorry readers for the inconsistency of my posts. Guess what I have been doing? Moving to college again! Yay! It is exciting. Today is my second day of classes at Biola. I have my first photo class of the year today, so I am very anxious for that one. Here it has been a consistent 80 to 85 degrees. Perfect beach weather. My dorm room is coming along wonderfully, I have enough pictures on the wall to sink a ship... but oh well. Oh, it was the funniest thing...okay so last night around 11, I was in my bed (yes, I know I go to bed early for a college student, well at least I try to) and this girl just welcomes herself inside my room. She just came in without an invitation, I had never seen her before, and she comes and leans on my bed and starts asking me all these random questions. "Who is this?" "Is this your horse?" "Is that your boyfriend?" "Wow, you have lots of pink in your room." "Is that your dog?" yadda yadda yadda. It was so odd. And then while she was leaving, she said again, "Gosh, you have so much stuff." So that was just a wonderful experience for me. So I guess how I could describe my room would be to say that it is pink, packed with pictures, with apparently too much stuff. Even though my odd visitor said I had too much stuff, she may be right. The one thing I hate about dorm rooms is how limited you are with the space. And I have so so many clothes, my little dorm wardrobe is bursting at the seams.

One thing about college that I am learning how to cope with is my inability to cook!! This summer I cooked something almost everyday. Going from creating whatever food I wanted to cook to practically nothing is very sad for me! First of all, I have no money...what college kid does? So getting food to cook with isn't going to happen for me. Not like it did this summer. This summer I asked my family and friends, "Hey what do you want tonight?" And they told me, then they would give me some money and I could get everything I needed. It was wonderful. In my room I have a 1.3 cubic ft. fridge, which can hold about a carton of eggs, some cottage cheese, and some soy milk. Not too many ingredients in there. The only thing I am thinkin I can make are my healthy pancakes. Yes. Healthy Protein Packed Pancakes! Simply delicious. They take 3/4 cup cottage cheese, 1/4 gluten free flour (in my case) and 3 eggs! Bing, bang, boom! Simple as that. Then I eat them with my sugar free syrup with is only 15 calories per serving (1/4 cup). Although, my dorm does not equip me to make too much amazing food...there is a silver lining to my situation. My boyfriend does live in an apartment this year, so if I save up to make a nice meal, I'll cook it there. So it won't be terrible :).

Homemade Granola

Homemade Granola. If you are going to make your own granola put in anything you really like! I like mine really honeyish and peanutey (if those are words :))
 Then I put Greek Yogurt in a little bowl and topped it with another homemade gluten-free granola I made with dried apricots, cherries, and raisins, almonds, and honey. 




For the Bars: 

1 2/3 cup oatmeal
1/2 cup brown sugar
1/3 cup flour (I use ground flax seed- but oat flour would work)
1/4 tsp. cinnamon
2-3 cups white chocolate chips, semi-sweet chocolate chips, cherries, cranberries  & almonds or whatever you want)
1/3 cup peanut butter
1 tsp. vanilla
6 Tbsp. melted butter
1/4 cup  Honey
Bake at 350
Line pan with parchment paper & grease it.
Stir dry ingredients together then whisk the  liquid ingredients together. Add together and press it FIRMLY into the pan. Bake for 25ish minutes. They will be browned on the edges and a little on top but seem soft, let them cool completely before cutting.
TIP- let them sit in the fridge for about 30 minutes before cutting.

The People Cupcakes

So here are the People Cupcakes. Making these gave us lots of laughs. They were made with all sorts of candy, you name it, jelly beans, sour patch kids, fruit loops, licorice, m&m's, skittles, and much more. What you want to use for your cupcakes is completely up to you. In the background are photos of my mom and dad and their moms and dads, cousins, friends, aunts and uncles. This was so enjoyable going through all of these photos and all of the memories that came with them.

Pretty Pretty Cupcakes

These cupcakes are happy cupcakes. I just love the colors, and the playfulness of them.  For the actual cupcake: they are lemon almond cupcakes with a cream cheese frosting. My friend, Teller, was over today and we decided to make something different so we thought that these flavors would work out well together. Turns out they did...well Teller liked them. Sadly, these were not gluten-free so I did not have any of the cupcakes. The original plan for the cupcakes were to make faces out of them with candy. Well, I wasn't very good at this, so I did these colorful fruit loop cupcakes...I liked them better. All I did was, while the frosting was wet, topped them with sprinkles, then put the matching colored fruit loops around the corner.
